Why isn't the "Original Published Key" stated on your site always the same key the song was recorded in?

The "Original Published Key" refers to the key the sheet music was published in, not necessarily the key the song was recorded in. Many pieces (especially Piano/Vocal and Piano/Vocal/Guitar) are not actual note-for-note transcriptions of the recording. Publishers will intentionally simplify these arrangements, which includes changing the key, to make them more playable for most musicians.
